The Perfect Gluten Free Quiche Lorraine Recipe

At the start of this new year, I found myself in a place of reflection. In the busyness of my daily life, I don't often make time to do that. Like most, I tend to get caught up in the whirlwind of daily responsibilities and I forget to pause and think. Friends, it's good to do that from time to time. To truly stop, and  reflect on everything that's happened (be it good, bad, or indifferent), and plot your course accordingly. 

This past year was a year of big changes for our family. The biggest of these changes came in August, when we joyfully welcomed our fourth child. This past year also presented it's fair share of challenges. That's OK though, I'm always up for a good challenge! Challenges bring along with them some great opportunities for growth and learning, and what would this life be if we didn't continue to grow and learn, right?  I can find gratitude for what we've learned in our home as a result of some of this past years challenges, too.

This year, I don't have any grand plans or resolutions, just one ongoing quest moving forward really; to remember to pause and find happiness in the little things. Honestly, my most favorite memories aren't really glamorous at all. They didn't include a ton of planning or decorating, and they didn't cost a ton of money. My most cherished memories, hands-down, have occurred around our kitchen table, over a great meal shared with my family.  Sunday breakfasts in particular, seem to bring about the most memory-making magic around here. My families current menu favorite for Sunday breakfast?  My recipe for gluten-free Quiche Lorraine. After a ton of tweaking (nailing down the recipe for gluten free pie crust wasn't easy, folks) we think it's pretty perfect. Definitely great for sharing with your favorite people around the breakfast table on a lazy Sunday morning, or any day of the week, really.

Perfect Gluten Free Quiche Lorraine Recipe

Recipe yields: 8-10 servings / 8-10 slices
Prep time: 30 minutes
Cook time: 1 hour 15 minutes



Perfect Gluten Free Pie Crust From Scratch

What you'll need:
  • a food processor
  • an 8"-10" deep dish pie plate
  • 1 cup gluten-free all-purpose flour
  • 1/2 teaspoon salt
  • 4 tablespoons ice water
  • 1 stick cold unsalted butter, cut into 1/2" pieces
  • 1 happy egg co. organic free range egg

How to:

  1. Add flour and salt to your food processor. Pulse until combined 
  2. Add butter [ pre=cut into 1/2" pieces ]. Pulse until mixed well [ with no large pieces/chunks of butter remaining. 
  3. Last, add egg and ice water to the mixture and pulse until combined well. Dough should hold together when squeezed. Roll dough into a ball. Roll out into an 8" - 10" circle. Press into greased deep dish pie plate. 
  4. Crimp with fingers around top edges if desired [refer to image above]. 
  5. Place pie plate in refrigerator for 10-15 minutes before adding filling.


Quiche Lorraine filling



What you'll need:
  • 1 1/2 cups heavy whipping cream [ you can substitute with 1 1/2 cups fat free half & half if you're cutting calories in the New Year ] 
  • 4 tablespoons butter
  • 1 large yellow onion [ sliced finely a]
  • 1 cup frozen cut spinach [ cooked and drained - press well to ensure all of the moisture/water is removed ]
  • 2 cups shredded mozzarella cheese
  • 8 strips of bacon cooked, drained, and diced
  • 8 happy egg co. organic free range eggs [ they are delicious and produce the most beautiful golden color - perfect for our Perfect Gluten-Free Quiche Lorraine recipe! How to:

  1. Preheat oven to 400 degrees Fahrenheit 
  2. cook bacon according to package directions and dice / crumble. Set aside.
  3. Saute /caramelize diced onion using 4 tablespoons butter over medium heat [for 10-15 minutes or ]. set to side,
  4. cook, drain, and press spinach [making sure that all water/moisture is removed] set to the side.
  5. in a large mixing bowl, combine your organic free range happy egg co. eggs, and heavy cream. Whisk/beat mixture until thoroughly combined. 
  6. Add mozzarella cheese, caramelized onions, bacon, and spinach to egg/cream mixture. Fold / combine ingredients well with a spatula  [until ingredients evenly mixed/disbursed.
  7. Remove your pie plate/ gluten-free pie crust from the refrigerator. Pour / fill with your completed filling/ mixture. Wrap top loosely with tin foil. 
  8. Place in preheated oven for 45 minutes. Remove tin foil, and continue baking for 15 minutes [ total bake time 1 hour ]
  9. Remove from oven. Allow to cool  for 15 - 20 minutes 
  10. Serve in slices, alongside your favorite hold or cold beverages.
