After catching the Minions movie from Illumination Entertainment in the theaters my entire family has been itching to see it again.  Those cute little yellow guys are just so darn funny! Their latest adventure in Minions will have the entire family rolling with laughter. After patiently waiting for the release to Blu-ray/DVD on December 8th, 2015, to say that we were super excited to see it again for our movie night last weekend, is an understatement!. First,we stopped by Target to grab our copy of Minions © 2015 Universal Studios. All rights reserved. Then I got down to the business of planning our movie night.

I had a blast setting up a fun table of minions themed snacks for the kids.  I made "raspberry royal crown" themed cookies, and adorable minions themed cups of homemade mango salsa (complete with blue tortilla chips positioned to resemble the minions' little tufts of hair, for dipping).

Everyone devoured their snacks and had so much fun watching the newest addition to the Despicable Me trilogy of films. Minions is so funny!  It really is a movie that the entire family can enjoy together.
Grab my recipe below for Mango Salsa, along with my simple tutorial on how to put these adorable minions serving cups together. It's the perfect snack to enjoy for your next family movie night,  while watching Minions!

Easy Mango Salsa Recipe ( + Minions Serving Cups tutorial)
Prep time: 10 minutes
Yields: 6 servings (or about 4 cups)
  • 2 ripe mangoes diced
  • 1/4 cup chopped fresh cilantro 
  • 1/2 cup peeled diced cucumber
  • 1/2 c. diced red onion (1 medium sized red onion)
  • 1/2 of a jalapeno pepper minced
  • 4 TBSP lime juice
  • salt and pepper to taste
  • blue tortilla chips for dipping (position in single serve cups to create the minions' "hair")

Make it:
Combine your diced mango, chopped cilantro, diced cucumber, diced red onion, lime juice, minced jalapeno pepper in a large mixing bowl. Stir/mix well. Salt and pepper to taste. Serve in cute minions themed cups (check our our simple image tutorial below).

To make the DIY Minions movie themed serving cups, I simply googled "printable minion eyes, and printable minion eyes with goggles" and shrunk the images down to fit my cups, then printed them. There are a ton of printable options available online, so they're easy to find.

Next, I cut them out, and affixed them to the front of my clear serving cups with tape. Clear cups allow the bright color of the mango to show through, making them look like little minions. So cute, and so easy!
