With Fall fully upon us now, it's officially time for comfort food! This one-dish Mediterranean chicken recipe (although super healthy) can definitely be classified as comfort food. This dish is packed full of delicious fresh vegetables and flavor, and it comes together easily in one dish for super easy clean-up; always my kind of meal!

Hi friends, how have you been? We are busy, busy, busy around here these days! It seems as though we went from zero to sixty when the school year started, with no chance of hitting the breaks in sight. I suppose it's always like that though, right?  With everyone going in different directions during the week,  dinner is the one steady that grounds us all around here, and brings us back together each night.

If your weekday schedule is as hectic as ours (fist bump - I totally empathize with you!) give this one-dish Mediterranean chicken a whirl. It's seriously so simple to put together - you may just be able to grab a few extra moments of "me time" (what?!) for a power nap or a manicure. Both sound dreamy to me right about now, friends....and the school year has only just begun.

Grab my super simple recipe for one-dish Mediterranean Chicken, below. Plus, find out my secret for keeping super fresh veggies always stocked and at-the-ready in our refrigerator, year-round.

This dish is really all about the fresh produce and the fresh Mediterranean pesto. My one super simple trick to keeping fresh vegetables on-hand (literally for weeks on end) year-round? Rubbermaid FreshWorks containers. It's that simple! These specially designed containers are vented using Rubbermaid's patented FreshVent technology (which helps to regulate the oxygen / CO2 levels in/out of the containers + the lid filter lasts a lifetime - no replacement filters needed.) This helps to keep/preserve fresh produce up to 80% longer* compared to traditional produce packaging.  They also have a removable CrispTray in the bottom of each container to keep your produce elevated from any moisture /condensation. I have been using FreshWorks containers for about a year now, and they've saved me BIG money, friends. Now, they're available in all-new sizes; including a container sized perfectly for asparagus - my favorite! I am absolutely LOVING the new size options!

FreshWorks containers are dishwasher safe. They are also made in the USA (using global components), and they are BPA-free. These handy containers are a total produce saver!
Available now in new sizes to hold all of your favorite produce, including:
  • Large Square (11.1 cups) - perfect for tomatoes
  • Long Rectangle (8.4 cups) - great for asparagus or zucchini
  • Small Rectangle (4.0 cups) - perfect for green beans
  • Medium (6.3 cups) - great for strawberries
  • Large (17.3 cups) - optimal for leafy greens
