Hi friends, how have you been? Well, it's here! The holiday season is officially upon us. Are you ready?

I think it's safe to say that this is the busiest time of year for moms. We plan, shop, wrap, decorate, clean, cook ... the to-do list is seemingly never-ending, isn't it? But certainly well worth it, to see the priceless looks on our children's faces as they light up with sheer joy from it all. During this time of year, and all year-round really, you'll never catch this mom of 4 without one key staple on-hand at all times; string cheese. All of my children are fairly picky eaters - but they'll never turn down string cheese. It's one of their #1 go-to snacks. They eat them with lunch and as a snack in-between meals. I also pack them for long car rides, and when we're heading out to run errands. I even incorporate them into my recipes from time-to-time {as I've shared here}; they're great to cook with!

As a mom, I'm happy that they're making a healthy responsible snack choice, so I make sure to never run out. This past weekend, I made the kids a quick and delicious hot snack using string cheese and a few other simple ingredients; I call them Pizza Poppers. They take about 5 minutes to assemble for baking, and they're hot and ready in about 15 minutes. They're the perfect after school snack! They would also serve as a great appetizer for guests this holiday season.

Grab my quick and delicious recipe for Pizza Poppers below:

Pizza Poppers Recipe
Recipe Yields: 16 Pizza Poppers
Prep time: 5 minutes
Cook time: 15-18 minutes

What you'll need:
  • A nonstick baking sheet
  • A small suace pan
  • 4 Disney® Frozen String Cheese sticks
  • 1 Can of ready-to-bake buttermilk biscuits (they generally come 8 to a can/package in the refrigerated section)
  • 1 Tablespoon garlic powder
  • 1/2 Teaspoon oregano
  • 2 cups of marinara sauce (for dipping)

How to:
  1. Cut each of your 8 pre-made refrigerated biscuits {dough} in half. When complete, you should have a total of 16 equally sized pieces. Lay them out evenly on your nonstick baking sheet, and set to the side
  2. Cut each of your 4 Disney® Frozen String Cheese sticks in quarters. When complete, you should have 16 equally sized pieces; each of the pieces should be about 1 1/2 inches in length.
  3. Lay one piece of cheese on top each of the 16 pieces of biscuit dough that you've layed out on your nonstick baking sheet.
  4. Next, roll each piece of dough around the cheese, concealing the cheese completely inside the dough. Form into a round ball. Repeat this step until each of your 16 pizza poppers are complete.
  5. Sprinkle each of your completed pizza poppers with a pink of garlic powder and a pinch of oregano.
  6. Place in a pre-heated oven {350 degrees Farenheit}. Bake for 15 minutes or until tops appear golden brown.
  7. Remove from oven, allow to cool for 5 minutes before serving.
  8. While your pizza poppers are cooling, warm 2 cups marinara in a saucepan { for dipping } over medium heat for 5 minutes { stirring consistently }
  9. Serve your pizza poppers alongside warm marinara, for dipping.
Enjoy!

As we head into the busy holiday season, make sure to grab some Disney® Frozen String Cheese at your local grocery store { I stock up at Target }. It's great to keep on-hand as a healthy snack for the kids, and as you can see, it's great to cook with as well!

As an added bonus, my youngest really enjoys that they feature some of his favorite Disney® Frozen characters on the packaging, too!
